The Italian Culinary Program is a a one-year course in culinary Arts, focused on the authentic Italian Cuisine and held in English language.
Organized in two educational units, it starts from the basics and accompanies students to the advanced level, therefore proving to be the perfect cooking course if you are looking for a real full immersion in the Italian food. A complete study experience to become a professional chef of Italian Cuisine.

During the residential phase our teachers will guide the students deepening their knowledge on different topics, following the suggestions of their teacher of Italian History and Culture adn will accompany them around the Food Valley and other regions in Italy, therefore visiting places and introducing traditions that are at the basis of the Italian food excellence. Students will be granted a part time frequency in order to be ableto enrich their gastronomical experience as well as making full use of the library, deepening intospecific topics under the guidance of their tutor.

The course includes for both units a residential phase in class and a intership phase, hosted by the most renowned restaurants in Italy. This internship represents an essential step within ALMA’s training programme which is considered as important as the study phase at school. It is indeed a time when students are asked to put into practice all the knowledge and skills they have learned during lessons and challenge themselves in a real and intense working environment. The internship establishments chosen by ALMA are all of the highest level: restaurants, patisseries, hotels and bakeries in Italy and abroad that project the students in a live situation which enables them to learn “in the workplace”.To practice at a fine-dining restaurant or in a large hotel chain is not an end unto itself. The value of an internship at an establishment chosen by ALMA provides guarantees that you will be on the front line, learning from the great masters, being challenged by experts, and appreciating the importance of learning from your own mistakes and starting again.Furthermore: for students, the ALMA internship is often the first opportunity to enter the world of work. More and more students are offered a job by the establishment where they do their internship.
